Ingredients

  • 2 cups dry elbow macaroni pasta
  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • 1 cup milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp dry mustard
  • ¼ tsp onion powder
  • 1 tsp Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • crushed Ritz crackers

Equipment

  • 6-quart saucepot
  • Rotary Cheese Grater
  • 8-inch Square Baking Dish

Method

  1. Preheat your oven to 400ºF. This initial step is crucial as it ensures your Golden Macaroni and Cheese bakes evenly and develops a lovely golden crust. While the oven warms up, you can prepare the other ingredients.
  2. Lightly spray an 8×8-inch baking pan with cooking spray to prevent sticking. This step will allow your cheesy masterpiece to slide right out when it’s time to serve.
  3. Cook the pasta according to the package directions until al dente. Drain and set aside. Keep an eye on the pasta; overcooking can lead to mushy macaroni, which we want to avoid for that perfect texture.
  4. In a medium saucepan over medium heat, melt the butter until bubbly. Add the flour and whisk it in, cooking for about 1 minute. This creates a roux that will thicken your cheese sauce.
  5. Slowly whisk in the milk, stirring constantly to prevent lumps. Continue to cook until the mixture thickens, which usually takes about 3 to 5 minutes. You’re looking for a consistency that coats the back of a spoon.
  6. Once thickened, stir in the salt, black pepper, dry mustard, onion powder, Worcestershire sauce, and the cheddar cheese. Stir until the cheese melts completely, creating a rich and creamy sauce that smells heavenly.
  7. Remove the saucepan from the heat and gently fold in the cooked pasta. Ensure each piece is well-coated in the cheesy goodness.
  8. Pour the mac and cheese mixture into your prepared baking pan, spreading it evenly. Topping it with the crushed Ritz crackers will give it that delightful crunch we all love.
  9. Bake in the preheated oven for about 20 minutes, or until the top is bubbly and golden brown. Keep an eye on it towards the end; you want it just right!
  10. Once baked, remove the Golden Macaroni and Cheese from the oven and let it sit for a few minutes before serving. This rest time allows the cheese to set slightly, making it easier to serve.

Notes

  • Tip 1: This recipe is easy to half or double for a crowd.
  • Tip 2: I topped the Golden Macaroni and Cheese with some crushed Ritz crackers. You can use breadcrumbs if you don’t have any crackers, or just bake it without a topping. Either way, it will still be delicious!
  • Tip 3: You can use any cheese that you prefer. I used cheddar. Gouda, pepper jack, colby would all be delicious.
  • Tip 4: Can Mac & Cheese be made in advance? Yes. You can assemble the casserole and refrigerate until ready to bake. You will need to increase the cooking time.
  • Tip 5: Can Mac & Cheese be frozen? Yes. Assemble the casserole and let it cool completely. Cover the dish with plastic wrap and aluminum foil. When ready to bake, thaw completely and bake until warm and bubbly.
