  • 25-30 pieces sweet potato gnocchi
  • 3/4 pound Italian sausage
  • 14 1/2 ounce diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/4 cup heavy cream optional – see notes
  • salt and pepper to taste

Method
 

  1. Begin by heating a large skillet over medium-high heat. Once hot, add the Italian sausage. As it cooks, break it apart with a mixing spoon. You want to ensure it’s cooked thoroughly and no longer pink, which should take about 5 to 7 minutes. You’ll notice the wonderful aroma filling your kitchen as the sausage sizzles.
  2. Once the sausage is cooked, drain any excess oil from the skillet. This step is crucial to avoid a greasy dish. Keep the skillet on the heat, as you’ll be adding more ingredients shortly.
  3. Now, it’s time to mix in the diced tomatoes and Italian seasoning. Stir everything together, allowing the flavors to meld for a couple of minutes. The tomatoes will start to break down, creating a lovely sauce.
  4. Next, gently fold in the gnocchi. You’ll want to be careful during this step, as you don’t want to mash the gnocchi. Ensure it’s evenly coated with the sauce.
  5. Allow the ingredients to heat together for another 5 minutes. You’ll notice the gnocchi absorbing some of the sauce, making it even more flavorful. This is where the magic happens, so don’t rush!
  6. Finally, once everything is heated through, taste and adjust seasoning with salt and pepper as needed. Serve immediately while it’s hot. Enjoy the delightful combination of flavors and textures!

Notes

For a tasty variation, if the tomatoes have a lot of liquid add 1/4 cup of cream for a light rose colored sauce.
