Method
 

  1. Start by gathering 3 cups of diced seedless watermelon. Make sure you use ripe and sweet watermelon, as this will greatly affect the flavor of your sorbet.
  2. Next, place the watermelon into a gallon-sized freezer bag. Spread it out to ensure it's evenly distributed; this helps it freeze faster.
  3. Pop the bag into the freezer for at least 2 hours or overnight. This step is crucial because freezing the watermelon helps achieve the desired sorbet texture.
  4. Once frozen, remove the bag from the freezer. If the watermelon has been in for more than 2 hours, allow it to sit at room temperature for about 10 to 15 minutes. This will make it easier to blend.
  5. Transfer the frozen watermelon to the bowl of a food processor. If you have a small one, do this in batches.
  6. As you process the watermelon, you may need to add warm water to help the mixture move around. Start with 1/4 cup and add more as needed, blending until smooth.
  7. Once smooth, taste the mixture. If you want it a bit sweeter, drizzle in up to 2 tablespoons of honey and blend again to incorporate.
  8. Transfer the mixture back into a freezer-safe container, smoothing the top with a spatula. This helps eliminate air pockets, which can create ice crystals.
  9. Freeze the container for at least an hour to firm up the sorbet before serving.
