Ingredients
  

  • 6 ears corn
  • 2/3 cup mayonnaise
  • 1/4 cup crumbled cotija cheese plus extra for sprinkling
  • 1 lime zest freshly grated you can use the juice to spritz after
  • 2 cups Flaming Hot Cheetos

Method
 

  1. First, preheat your grill to the highest setting.
  2. Next, shuck the corn. While I personally like to leave part of the husk for presentation, it’s much easier to eat when fully shucked.
  3. Now, without any oil, place the corn directly onto the grill grates. Trust me; it grills beautifully without it. Let it cook until you notice a rich golden color and slight char, rotating every few minutes. This usually takes about 10 to 15 minutes.
  4. While the corn is grilling, prepare your mayo mixture. In a bowl, stir together the mayonnaise, cotija cheese, and lime zest until well combined.
  5. Once that’s done, it’s time for the Cheetos! Place them in a food processor and pulse until you have small crumbs. If you don’t have a food processor, you can seal them in a bag and crush them with a rolling pin.
  6. Once the corn is beautifully grilled, remove it from the grill and spread about two tablespoons of the cotija mayo mixture over each ear of corn.
  7. Now, it’s time for the fun part! Roll each ear of corn in the crushed Flaming Hot Cheetos until it’s fully coated.
  8. Don’t forget to sprinkle a bit of extra cotija cheese on top for an added touch of flavor and visual appeal.
  9. Finally, serve your Flaming Hot Cheetos Grilled Corn immediately with fresh lime wedges for spritzing.

Notes

  • Tip 1: Leftover corn can be stored in an airtight container in the refrigerator for a couple of days. Just reheat before serving.
