Ingredients
  

  • 1 1/2 lbs cod or fish of choice
  • 2 cups baby arugula
  • 1 cup fresh basil packed
  • 1/3 cup coconut aminos
  • 1/4 cup avocado oil
  • 1/3 cup roasted pumpkin seeds
  • 1 pinch sea salt to taste

Method
 

  1. Preheat your oven to 350 degrees F and line a baking sheet with parchment paper. This is crucial as the parchment will create a steaming effect for the fish.
  2. Add all the ingredients, including the cod, arugula, basil, coconut aminos, avocado oil, and pumpkin seeds, to a food processor or blender. Blend until you reach your desired texture. I like mine smooth for a cohesive sauce.
  3. Lay the cod fillet flat on the parchment paper. Make sure to center it well so there’s room to fold the paper around it.
  4. Sprinkle a pinch of sea salt over the cod. This helps to season the fish evenly.
  5. Spoon on a generous amount of your prepared sauce, and smooth it over the fillet, ensuring it’s well-coated for that burst of flavor.
  6. Now, it’s time to fold the parchment paper over the cod. Create a packet by folding the edges together. If needed, use twine to tie the ends tightly so that it remains closed during baking.
  7. Place the packet on the prepared baking sheet and bake in the preheated oven for 20 to 30 minutes. The cooking time may vary depending on the thickness of your fish. Look for it to be opaque and flaky.
  8. Once cooked, carefully remove the packets from the oven. Be cautious as steam will escape when you open them!
