Ingredients
  

  • 2 heads fennel sliced very thinly
  • 2 green onions green onions sliced
  • 6 ounces Gorgonzola cheese crumbled
  • 1/2 lemon lemon juiced
  • 1 1/2 tablespoons extra virgin olive oil just slightly more than the quantity of lemon juice
  • Coarse sea salt to taste
  • Spring salad greens optional

Method
 

  1. Combine fennel, onions, and Gorgonzola. Mix lemon juice and olive oil and add to salad. Toss, and adjust dressing as needed. Sprinkle with coarse sea salt to serve. You may add spring mix to extend salad.
