Butter a 9" round springform mold or a deep pie pan and line the bottom with parchment paper.
Preheat your oven to 375 degrees Fahrenheit.
Cream together softened butter, 1 egg yolk, and 2 1/2 Tbsp milk until light and fluffy.
Sift in 2 cups all-purpose flour, 1 3/4 Tbsp cocoa powder, and 3/4 Tbsp baking soda.
Blend the dough together until cohesive.
Divide the dough in half and wrap in plastic wrap, then freeze for an hour.
In another bowl, mix 1.5 lbs Farmers cheese, 1 1/4 cups sugar, 3 eggs, and 1 1/2 Tbsp starch until smooth.
Grate the first ball of frozen dough into the bottom of the prepared pan.
Pour the cheese filling over the grated dough.
Grate the second ball of dough over the cheese filling.
Bake at 375 degrees Fahrenheit for 30 to 35 minutes.
Let the cake cool completely before adding the glaze.
For the glaze, melt 3/4 stick butter, 3/4 cup sugar, 1 Tbsp cocoa powder, and 3 Tbsp water over medium heat.
Once cooled, pour the glaze over the cake and refrigerate until set.
Top with fresh fruit if desired.
