Ingredients
  

  • 1 cup Plain All-Purpose Flour
  • 1 tsp Baking Powder
  • 2/3 cup Caster Sugar
  • 4 Free-Range Eggs
  • 160 g Butter (Melted)
  • 2 Tbsp Honey
  • 2 tsp Vanilla Extract
  • 2 tsp Lavender
  • 1 Lemon Zest Finely grated rind of a small lemon

Method
 

  1. Preheat your oven to 180C / 350F, and prepare your madeleine molds by lightly greasing them with cooking spray.
  2. In a large mixing bowl, combine the plain all-purpose flour, baking powder, free-range eggs, vanilla extract, honey, and the melted butter. Using a whisk, mix everything until you achieve a smooth batter.
  3. Using a dessert spoon, scoop out the batter and fill each mold about three-quarters full.
  4. Place your molds in the preheated oven and bake for 8 to 10 minutes until golden brown and firm to the touch.
  5. While the madeleines are baking, prepare the lavender and lemon sugar mixture by combining the remaining caster sugar with the dried lavender and the finely grated lemon zest.
  6. Once the madeleines are baked, remove them from the oven and allow them to cool slightly in the molds.
  7. While they cool, sprinkle the lavender and lemon sugar over the warm madeleines.
  8. Allow the madeleines to cool completely before enjoying your delightful treats.

Notes

  • Storage: Madeleines will last a few days when stored in an air-tight container.
  • Freezing: They also freeze well when wrapped.
  • Thawing: To thaw, leave them out at room temperature until defrosted.
