  • 1.5 pounds baby potatoes cut into halves
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 1/2 teaspoon Italian seasoning
  • 2 cups cooked turkey meat or more, to taste
  • 1/2 cup heavy/whipping cream
  • Salt & pepper to taste

Method
 

  1. Begin by heating the olive oil in a large pot over medium-high heat. As it heats, you’ll notice the oil shimmering, which means it’s ready for the next step.
  2. Add the chopped onion and sauté until it’s lightly browned, approximately five to seven minutes. You want the onions to become translucent and fragrant, bringing a wonderful base flavor to your soup.
  3. Next, stir in the minced garlic and cook for about 30 seconds. You’ll know it’s ready when the garlic releases its aromatic scent—be careful not to let it burn!
  4. Now, it’s time to add the chopped celery, sliced carrots, cut potatoes, broth, water, and Italian seasoning. Bring the mixture to a gentle boil by increasing the heat to high.
