- Start by adding the lukewarm water, warm milk, eggs, melted butter, flour, sugar, and sea salt into a blender. Blend the mixture on low speed until all the ingredients are combined smoothly. This should only take about one to two minutes. Let the batter sit for a few minutes; this resting period allows the bubbles to settle down, resulting in a smoother crepe.
- Next, heat a non-stick skillet or a crepe pan over medium heat. Melt a small amount of butter in the pan. You want just enough to lightly coat the surface. If you have two skillets, use them both—this speeds up the cooking process!
- Once the pan is adequately heated, pour about ¼ cup of batter into the center. Quickly swirl the pan to spread the batter evenly, covering the bottom of the skillet. If you notice any gaps, pour a little more batter to fill them in. You want a thin layer to get that signature crepe texture.
- Keep an eye on the edges as they start to turn golden. This usually takes about one to two minutes. Once they’re golden, use a thin-edged spatula to carefully flip the crepe. This can be a bit tricky, but with practice, you’ll get the hang of it!
- After flipping, sauté the other side for another thirty seconds, or until it reaches a beautiful golden color. Slide the crepe out onto a clean cutting board or plate. You can stack them as you go, just make sure they cool to room temperature.
- Repeat this process with the remaining batter, adding more butter to the pan as necessary. Feel free to adjust the heat if you notice the crepes cooking too quickly or too slowly. It’s all about finding that perfect balance!
