Ingredients
  

  • 1 sheet Frozen puff pastry
  • 3 tablespoons Salted butter
  • 8 ounces Goat cheese
  • 1 cup Dried cranberries
  • 2 tablespoons Cinnamon sugar

Method
 

  1. Preheat your oven to 375° F. Line a baking sheet with parchment paper.
  2. Unroll the puff pastry onto a lightly floured surface. Brush the entire pastry with 1 tablespoon of melted butter.
  3. Sprinkle 1 to 2 tablespoons of cinnamon sugar evenly over the surface of the pastry.
  4. Crumble the goat cheese evenly over the pastry.
  5. Sprinkle the dried cranberries over the cheese.
  6. Starting at the long end, carefully roll the puff pastry up as tightly as possible.
  7. Brush the rolled pastry with the remaining melted butter.
  8. Sprinkle more cinnamon sugar over the top of the roll.
  9. Using a sharp knife, slice the roll into 16 swirls, each about 1 inch thick.
  10. Place the swirls on the prepared baking sheet and bake for 15 to 20 minutes or until the pastry is golden brown.
  11. Allow the swirls to sit on the pan for about two minutes before transferring them to a serving plate. Serve warm.

Notes

  • Make Ahead: Prepare through step 3 and place the swirls on a parchment-lined baking sheet. Cover and keep in the fridge for up to 2 days. When ready to bake, preheat the oven and bake as directed.
  • Cinnamon Sugar: Mix 1/4 cup brown sugar or coarse turbinado sugar with 1 tablespoon ground cinnamon. Store in an airtight container.
  • Storage: Store any leftover swirls in an airtight container in the fridge for up to 3 days. Reheat in the oven for the best texture.
