  • 1 cup Light brown sugar
  • 1 large Egg
  • 1.5 teaspoons Vanilla extract
  • 1 cup Sweetened flaked coconut
  • 1 cup Chocolate chips or chunks
  • Additional Coconut for sprinkling for sprinkling on the top of the bars

Method
 

  1. Preheat your oven to 350°F. Begin by greasing an 8-inch square baking pan with cooking spray.
  2. In a medium bowl, combine the all-purpose flour and salt. Whisk them together to ensure they're well mixed and set this mixture aside for later use.
  3. Next, in another bowl, stir together the melted butter and light brown sugar until you achieve a smooth and creamy consistency.
  4. Beat in the egg and vanilla extract until everything is well blended.
  5. Now, slowly add the flour and salt mixture to your wet ingredients, mixing until just combined.
  6. Fold in the sweetened flaked coconut and chocolate chips.
  7. Scrape the batter into your prepared pan, smoothing it down with a spatula.
  8. Sprinkle additional coconut over the top of the batter.
  9. Place the pan in the preheated oven and bake for 25 to 30 minutes.
  10. Once done, let the blondies cool slightly in the pan before transferring them to a wire rack to cool completely.
