  • 1 avocado pitted, peeled, and diced
  • 1/4 cup chopped green onions white and green parts
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime or lemon juice
  • 1 tablespoon honey
  • 1/2 teaspoon salt

Method
 

  1. First, start with the quinoa. Position a rack in the top third of your oven and preheat the broiler to high. Spread the cooked quinoa onto a rimmed baking sheet in an even layer. This is where the magic happens as it roasts!
  2. Keep an eye on the quinoa as it roasts. After about five minutes, stir it gently and rotate the baking sheet to ensure even cooking. You're looking for a nice darkened color that’s crispy but not burnt. It should take about three more minutes. Once done, let it cool a bit.
  3. Next, it’s time to make the vinaigrette. Grab a mason jar with a tight-fitting lid, and add olive oil, fresh lime or lemon juice, and honey. Close the jar tightly and shake vigorously until everything is well combined. This dressing will tie the whole Citrus Salad together.
