Ingredients
  

  • 1 cup old-fashioned rolled oats
  • 3 tablespoons unsweetened cocoa powder
  • 2 tablespoons flaxseed meal
  • 1 tablespoon chia seeds
  • 1/8 teaspoon kosher salt
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons mini chocolate chips

Method
 

  1. In the bowl of a stand mixer, combine old-fashioned rolled oats, cocoa powder, flaxseed meal, chia seeds, kosher salt, creamy peanut butter, honey, and vanilla extract. Start mixing on low speed using the beater blade until all the ingredients are well combined. It may take a minute or two, so be patient! If you notice some ingredients sticking to the sides, stop the mixer and scrape the bowl down with a spatula.
  2. Once everything is mixed well, it’s time to add in the mini chocolate chips. Gently stir them in with a spatula or spoon until they are uniformly distributed throughout the mixture. The chocolate chips should be evenly spread, offering delightful bursts of chocolate in every bite.
  3. Next, take a small amount of the mixture—about 1 to 2 tablespoons per ball—and roll it between your hands to form small balls. It’s therapeutic to make these little shapes! Aim for a uniform size so that they all have the same texture and are easy to enjoy later.
  4. Once you’ve formed all the mixture into balls, place them in an airtight container. Make sure they are spaced out a bit to avoid sticking together. They can be stored in the fridge for up to two weeks, but I doubt they’ll last that long!

Notes

  • If you don’t have a stand mixer: You can use a bowl and wooden spoon to make the energy balls.
  • Freezing: You can also freeze the energy balls for up to two months. Keep in a freezer bag or container in the freezer.
