Ingredients
  

  • 1 1/2 pounds ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup corn, frozen, organic
  • 15 ounces black beans, canned, no sugar added, drained and rinsed
  • 7 ounces chipotle peppers in adobo sauce, canned
  • 10 pieces corn tortillas or whole wheat
  • to taste cilantro, freshly chopped
  • to taste Greek yogurt, fat-free, plain
  • to taste salsa, no sugar added, low sodium

Method
 

  1. Heat a large nonstick skillet over medium-high heat. Add onion and garlic; heat until garlic is fragrant, about 4 minutes.
  2. Add ground turkey and brown; crumbling with a wooden spoon for about ten minutes.
  3. Stir in the rest of the ingredients (from corn to salsa) and simmer for 10 minutes.
  4. Warm tortillas on stove or in microwave if you like (not necessary).
  5. Spoon 3/4 cup turkey mixture into each tortilla and garnish with a dollop of Greek yogurt and freshly chopped cilantro. There is SO much flavor in this dish, there is no need for cheese!

Notes

  • The can of chipotle chiles: easily will make a second batch of this recipe. Save the extra few chiles for next time.
  • Adobo sauce: You can add a spoon of the adobo sauce from the can to the turkey mix.
  • Excellent substitute: The chiles are an excellent substitute for any taco seasoning packet.
