Season 2 pounds of boneless skinless chicken breasts with kosher salt and ground black pepper to taste. Make sure to coat the chicken thoroughly for the best flavor.
Heat a 12-inch cast iron skillet over medium-high heat. Add in 1 tablespoon of olive oil and 1 tablespoon of unsalted butter. Once melted, it’s time to add the chicken.
Add in the seasoned chicken and cook until no longer pink, approximately 7 to 10 minutes. Stir occasionally to ensure even cooking.
Once the chicken is cooked through, add in 21 ounces of condensed cream of chicken soup, ½ cup of milk, 16 ounces of frozen mixed vegetables, and 1 cup of the shredded cheddar cheese. Mix well.
Continue cooking until everything is warmed through. This will create a deliciously creamy filling.
Remove the skillet from the heat and top with 32 ounces of frozen tater tots. Spread them out evenly over the chicken mixture.
Sprinkle the remaining cheddar cheese over the tater tots for an extra cheesy finish.
Place the skillet in the preheated oven and bake for 25 to 30 minutes. Keep an eye on it until the tater tots are golden and crispy.
Once done, carefully remove the skillet from the oven. Let it cool for a few minutes before serving. This will help everything set a bit.
