Ingredients

  • 6 large eggs 4 for batter, 2 for breading
  • ½ cup mayonnaise
  • 2 tablespoon whole grain mustard
  • ½ cup onion finely chopped
  • 1 cup Panko bread crumbs plus a little extra, if needed
  • 2 cups all-purpose flour
  • 1 cup corn meal
  • 1 teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper
  • Vegetable oil for frying
  • White Alabama Sauce for dipping
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

  1. Start by heating your grill to medium heat. Once hot, place the Eckrich Cheddar Smoked Sausage on the grill. Cook for about eight minutes, flipping occasionally until grill marks appear and the sausage is cooked through. Remove them from the grill and let them cool completely.
  2. After the sausages have cooled, cut them down the center and then into fourths. Roughly chop them into smaller pieces and transfer them into a large mixing bowl.
  3. To the bowl with the chopped sausage, add four of the large eggs, mayonnaise, mustard, onion, and Panko bread crumbs. Mix everything together thoroughly until you have a stiff mixture. If it seems too loose, you can incorporate a little more bread crumbs until a tight batter forms.
  4. Set up a dredge station with three bowls. In the first bowl, place the all-purpose flour. In the second bowl, whisk together the remaining two eggs with two tablespoons of water. The third bowl should contain a mix of bread crumbs, corn meal, salt, and black pepper.
  5. Using moistened hands, take a small amount of the fritter mixture and roll it into bite-sized balls. Roll each ball in the flour, shaking off any excess.
  6. Next, dip the flour-coated ball into the egg mixture, allowing any excess to drip off. Then, roll it in the breadcrumb and cornmeal mixture to fully coat. Place the formed fritters on a baking sheet.
  7. Once all fritters are formed, refrigerate them for at least twenty minutes. This helps them firm up and ensures they maintain their shape while frying.
  8. In a large pot, heat enough vegetable oil to cover the fritters for frying. Carefully add three to four fritters at a time to the hot oil, ensuring they have enough space to cook evenly.
  9. Fry the fritters for about two to three minutes or until they turn golden brown on all sides. Use a metal slotted spoon to remove them and place them on a paper towel-lined plate to drain excess oil.
  10. Finally, arrange the cooked fritters on a serving platter. Drizzle them with Alabama White Sauce and sprinkle with fresh parsley for garnish. Serve them hot with additional sauce on the side for dipping!
