In a skillet over medium heat, melt 1 tablespoon of butter. Once melted, add the diced apples and sauté them until they begin to soften, about 3 to 5 minutes. You want them tender yet still holding their shape.
Next, sprinkle in the brown sugar, ground cinnamon, and a pinch of nutmeg. Stir well to combine and continue to cook for another 3 to 5 minutes, allowing the flavors to meld beautifully. The apples should be coated in a sweet caramelized mixture by this time.
Once cooked, remove the apple mixture from the heat and set it aside. Take 8 tortillas and spread 1 tablespoon of caramel sauce on one side of each. This step adds a wonderful sweetness to the quesadilla.
Divide the apple mixture evenly among four of the tortillas, spreading it out to cover the surface. Then, take the remaining four tortillas, place them caramel side down on top of the apple-filled tortillas, and press gently to seal.

Cook the quesadilla until it’s browned and crispy, about 2 to 3 minutes on each side. You can add a little more butter if necessary for a golden finish.
Repeat this process with the remaining quesadillas, adjusting the heat as needed so they don't burn. You want them crispy and wonderfully golden.
