- Preheat your oven to 425 degrees and line a baking sheet with parchment paper or a silpat liner. This ensures your scones don't stick and bake evenly. The warm temperature will help the scones rise beautifully.
- In a large bowl, combine flour, sugar, baking powder, and a pinch of kosher salt. Whisk these dry ingredients together until well mixed. This step is crucial for even distribution of the baking powder.
- Now, add goat butter into the mixture. Using a pastry blender or two forks, blend the butter into the flour mixture until it resembles coarse meal, with tiny pea-sized pieces of butter visible. This creates the flakiness that makes scones delightful.
- In a glass measuring cup, combine goat milk, egg, and vanilla extract. Whisk until the egg is well mixed in. This liquid mixture will bind your dry ingredients together.
- Make a well in the center of the flour mixture and pour in the liquid mixture. Use a spatula to gently mix the dough until it just comes together. Be careful not to over-mix, as this can make the scones tough.
- Gently fold in the blueberries, ensuring they’re evenly distributed throughout the dough. The juice from the berries will add beautiful color and flavor to your scones.
- Flour a clean surface and dump the dough onto it. Flour your hands and sprinkle some flour on top of the dough to make it easier to handle. Knead the dough gently for about 5 minutes until it becomes smooth and combined. It should be soft but not sticky.
- Flatten the dough to about three-quarters of an inch thick and use a three-inch biscuit cutter to cut out the scones. Place them onto the prepared baking sheet, leaving space between each scone.
- Using a little extra goat milk, brush the tops of the scones to give them a nice golden color as they bake. Sprinkle with sanding sugar if desired for an extra touch of sweetness and crunch.
- Bake the scones for about 10 to 13 minutes until they are puffed, lightly golden brown, and fully cooked. They smell heavenly as they bake!
