Method
 

  1. Start by mashing the avocado in a small bowl and season it with kosher salt and black pepper. The key is to make it as creamy or chunky as you prefer. A touch of lemon juice can add brightness if you like.
  2. Next, heat a small nonstick skillet over low heat. When it's hot, spray it with olive oil. Gently crack the egg into the skillet. Cover it to cook until the egg sets and the yolk is to your liking. You can cook it sunny side up, over-easy, or even scramble it.
  3. If you want to make hard-boiled eggs, you have several methods. You can boil the egg by bringing a small pot of water to a boil. Stir in a teaspoon of white vinegar into the boiling water, create a gentle vortex, and then carefully add the egg. Cook for three to four minutes until the yolk is cooked to your liking. Use a slotted spoon to remove the egg and place it on a paper towel.
  4. Alternatively, beat the egg in a small bowl with a fork, adding a pinch of salt. Pour the mixture into the heated skillet and watch as the edges start to set. Gently fold the eggs until cooked through, about two to three minutes.
