In a food processor, combine the cooked chickpeas, ripe avocados, tahini paste, salt, lemon juice, and olive oil. Pulse the mixture until it starts to blend together.
Continue to pulse the mixture until you achieve a very smooth dip. You can run the food processor for up to five minutes if necessary; this helps create that ultra-smooth texture.
If you prefer your hummus to be a bit thinner, add a small amount of water cautiously. Be careful not to add too much, as you want to keep the dip thick and creamy.
Once you’re satisfied with the consistency, transfer the hummus to a serving bowl. Use a spoon to spread it out evenly.
Drizzle a little extra virgin olive oil over the top to enhance the flavor and presentation.
