Ingredients

  • 3 tangerines tangerines juiced
  • 2 tablespoons olive oil
  • ½ lemon lemon juiced
  • 1 clove garlic minced
  • ½ teaspoon lemon zest
  • to taste salt
  • 1 10-ounce package baby greens
  • ½ cup chopped walnuts
  • cup crumbled feta cheese
  • 2 teaspoons lemon zest
  • 1 apple cored and thinly sliced
  • 1 avocado peeled, pitted and diced

Equipment

  • Peeler
  • Chef's Knife
  • Cutting Board

Method

  1. Start by preparing the dressing. In a container, combine tangerine juice, olive oil, lemon juice, garlic, lemon zest, and salt. Seal the container and shake vigorously until all the ingredients are well combined. You want a smooth, flavorful dressing that will coat the salad nicely.
  2. Next, move on to the salad itself. In a large mixing bowl, toss together the baby greens, walnuts, feta cheese, another sprinkle of lemon zest, and the apple slices. Make sure to mix them gently to avoid bruising the greens.
  3. Now, it’s time to add the dressing. Pour it over the salad mixture and toss well to ensure everything is coated in that delicious dressing you made earlier. The flavors will meld together beautifully, creating a vibrant dish.
  4. Finally, top the salad with diced avocado and, if you desire, a little extra dressing or feta cheese for garnish. This will add a lovely finishing touch and make your salad look even more appealing.

Notes

  • Tip 1: Keep the salad in an airtight container in the refrigerator for up to three days. Make sure not to add the dressing until just before serving to keep the greens fresh.
  • Tip 2: While it's not recommended to freeze this salad due to the fresh ingredients, you can freeze the dressing separately for future use.
  • Tip 3: This salad pairs wonderfully with grilled chicken or fish for a complete meal.
  • Tip 4: Feel free to add different fruits like pears or berries for a unique twist.
  • Tip 5: Adding fresh herbs like mint or basil can enhance the flavor profile. Experiment to find what you love.
  • Tip 6: Omit the feta cheese and make sure the dressing is dairy-free to cater to vegan diets.
